Easy Swai Fish Salad

20170220_172121As I was doing my weekly grocery shopping last week, I began to realize that I eat a whole lot of meat! Not much of beef, but mostly chicken and pork. I have not eaten salmon in a long time, and the last time I can remember having a nice home-cooked seafood meal was during Christmas.

I picked up a package of chicken drumsticks, but after this realization, I walked to the seafood section and decided to pick up frozen Swai Fish fillets. They looked easy to bake and were even on sale! When I got home, I quickly went to work preparing the fillets, and dinner was ready in under 15 minutes.

This quick and easy recipe can be made by anyone. The ingredients listed below are easy to find at any grocery store. I typically oil my pans with Canola Oil, but Olive Oil can also be used. 20170220_162446The Sesame Ginger Marinade can be found in the sauces/spices section of your local grocery store. Lawry’s makes many types of marinades and the Sesame Ginger variety is very flavorful and has been my favorite (I use it on chicken and pork as well). When sprinkling the salt on the fish fillets, ensure you season it lightly as the marinade contains soy sauce, which already has some sodium.

The baked Swai fish goes well on top of a bed of crisp, salad greens. The sesame ginger marinade combined with the black pepper and red pepper flakes adds a robust and spicy flavor to the flaky fish. Salad dressing is not even needed- just spoon some of the broth from the pan on your bed of  salad greens. I typically keep my salads simple; however, almost anything, such as toasted nuts, crunchy noodles, dried cranberries, and feta cheese, can be added to the salad. In addition to a salad, the fish can also be eaten as a sandwich between two slices of bread or a butter roll or with your favorite cooked vegetable.

Note: After I devoured my salad, I did a quick google search to learn more about Swai Fish and where it comes from. It’s a type of Southeast Asian catfish and there appears to be some controversy surrounding it because it is not subject to federal inspection requirements.20170220_162258

Ingredients

  • Frozen Swai Fish Fillets, thawed
  • Salt
  • Black Pepper
  • Red Pepper Flakes
  • Sesame Ginger Marinade
  • Salad Greens
  • Shredded Parmesan Cheese
  • Dried Cranberries

Directions

  1. Preheat oven to 350 degrees. Assemble salad greens, cranberries, and your other toppings of choice on serving plates.20170220_165246
  2. Place foil in a pan and lightly oil. Arrange thawed fish fillets on oiled foil.20170220_164516
  3. Sprinkle salt, black pepper, and red pepper flakes on each side of the fillets. Then lightly drizzle marinade on each fillet.20170220_164924
  4. Cover pan with foil and place in the middle rack of the preheated oven. Bake for 13 minutes. Fish should be browned on the edges.20170220_171605
  5. Arrange fish fillet on salad greens. Top with shredded Parmesan cheese.20170220_172111
