Lobster Rolls are typically not our sandwich of choice, for two main reasons. First, mayonnaise tops the list of foods we detest. No offense to the mayo lovers out there, but it is one of those condiments that we really cannot eat. EVER. Most Lobster Rolls we have come across in restaurants in the past had mayo. Second, we are also not fans of cold sandwiches, especially if it does not involve cold cuts. Again, most lobster rolls we have seen on restaurant menus feature cold lobster slathered in way too much mayo.

So for those reasons, lobster roll was never on our radar. Until a few months ago. Our parents just returned from a brief stay in Westbrook Connecticut. And our father in particular raved about an amazing lobster roll sandwich he had (lobster roll, who knew?). Ever since then, my father has been on a quest to have an another amazing Lobster Roll.

One day, on a trip back from DC, we decided to make a pit stop in Baltimore for food. And what better place to get lobster roll than Baltimore, which is well known for its seafood? So, we stopped into a seafood restaurant and ordered four lobster rolls made to our preference: no mayo and warm lobster (we later learned that the chef basically made it ‘Connecticut Style’, in that the lobster is sauteed in butter). Boy, were we in for a treat.

After that, we realized that Lobster Rolls have distinct styles – we had never came across the Connecticut style and had primarily been exposed to the other styles that are made with mayo. We also realized that it is so very easy to make, why not try it for ourselves?

So, we set a date to make our very own buttery and warm lobster rolls. Although lobster roll is easy to make, finding the lobster meat was a different story. We were on a hunt for the meat by itself, so that we could avoid the work of buying a live lobster, cooking it, then fighting with it to take the meat out. After several visits to various seafood stores and supermarkets, we finally found one that sold the cooked meat by the pound. For a whopping $40/lb!

Despite the price, we decided it was worth it if 1 lb of lobster meat could yield 4 sandwiches (hey, $10 sandwich ain’t bad, compared to how much it costs in restaurants).

So finally, we had our lobster meat. It was time to get cooking! It took less than 10 minutes to make, and the results were beautiful.

Ingredients (for 4 sandwiches)

  • 1 pound cooked lobster meat,roughly chopped in small to medium size pieces
  • 1 stick (8 tablespoons) of butter
  • Salt, black pepper, and paprika to taste
  • 4 fresh rolls or buns of your choice

    Melting Butter

Directions

  1. Melt the butter completely in a large pan on medium heat.
  2. Place the lobster meat in the pan.
  3. Add in salt, black pepper, and paprika to taste.
  4. Let it all saute until the lobster meat has soaked up most of the butter (no more than 5 minutes)
  5. While the lobster is on the stove, lightly toast your bread of choice. We took some of the excess butter in the pan with the lobster, and brushed it on the bread before popping the bread into the oven for 2 minutes to get toasty

Potato Rolls

Once the bread is toasted and the lobster fully heated through and soaked with most of the butter, assemble your sandwiches. It’s best enjoyed warm and fresh!
