If you couldn’t tell already by browsing through this blog, we’re big breakfast fans! From omelets and breakfast casseroles, to pancakes and waffles, we’ve covered all of my favorite classics with the exception of French toast. French toast is one of my favorite breakfast treats, and probably the easiest to make and the hardest to mess up.
To me, great french toast is fluffy, lightly sweet, thick but not dense, and can stand all on its own (syrup and whipped cream optional)! To make this possible, the bread (which should be fresh, soft, and thickly cut), and the egg mixture are both very important. But don’t despair! I have just the perfect recipe you need to pull together simply delicious french toast!
I discovered a great Fluffy French Toast recipe online, and with a few tweaks, settled on a recipe that is perfect for making frenchtoast for two (with four thick slices of bread). The use of flour and baking powder leads to very soft and fluffy french toast.
My favorite bread to use is Nigerian Agege bread,a sweet loaf that is ubiquitous in Nigeria, but can also be found in African food markets in major cities. I’ve also had good results with Texas toast bread. Feel free to experiment with different types of bread until you’ve found your favorite.
Ingredients
- 1 egg
- 1/3 cup milk (almond milk is a delicious substitute I use sometimes)
- 1 teaspoon vanilla extract
- 2 tablespoons of flour
- 1 teaspoon baking powder
- 2 tablespoons of white sugar
- 1/2 teaspoon cinnamon powder
- 1/2 teaspoon salt
- Some butter for greasing the pan
- 4 thick slices of bread
Directions
- Combine flour, baking powder, cinnamon, sugar, and salt in a bowl.
- In a separate bowl, combine the remaining ingredients. Add the wet and dry mixtures together.
- Grease pan lightly with butter and heat.
- Dip each bread slice in the egg/milk mixture, ensuring that all sides are covered and the bread is fully saturated. Place covered slices in hot plan.
- Pan fry each side until golden brown and there are no wet surfaces remaining.
- Enjoy warm, plain, or with toppings of your choice (syrup and a dollop of whipped cream are my favorite)
