Asian Inspired Fried Rice

20140420_135458Have you ever tried Fried Rice? I’m sure everyone I know has eaten Fried Rice. It’s probably the most popular dish at any Chinese (or Asian) restaurant and one choice that can’t really go wrong.

So this week, I decided to make my own version of Fried Rice, inspired by the famous Chinese cuisine.  I wanted it to be flavorful, a bit spicy, and packed with protein. With cooked rice already in my fridge, this dish was very quick and easy.

Even without fresh onions and garlic (I ran out of these 2 essential items. Under normal circumstances, I would have included them in the ingredient list below.), the dish was amazing. The rice was not mushy (because it was cooked and chilled) and the chicken was well marinated. Here’s what I used:

    • 14070870368602 cups Jasmine rice, cooked and chilled
    • 3 large boneless, skinless chicken breasts
    • Salt, black pepper, garlic powder, ground pepper, red pepper flakes
    • Soy Sauce
    • Oil (I usually use canola oil)
    • Honey
    • Frozen peas
    • Half green pepper, sliced
    • 3 fried eggs, sliced (whisk 3 eggs in a bowl and add some salt. Add a little butter to a skillet and fry the eggs)

Directions:

  1. First, cut the chicken breasts into bite size pieces (I like bite-size, but if you like chunkier pieces, you can cut your meat accordingly!) and place in a large bowl. Add some salt and remaining the spices listed above. Cover the bowl with a plastic wrap and let1407086933552 the meat marinate for a few hours.
  2. Heat oil in a large pot. Add the marinated chicken and cook until browned. Stir occasionally so the meatdoes not stick to the pan.
  3. Add honey, frozen peas, sliced pepper, and soy sauce. Cover the pot and allow ingredients to simmer.
  4. In another large pot, heat oil. Next, add the cold rice to the heated oil and stir.
  5. Add the chicken mixture and sliced fried eggs and mix, making sure all ingredients are evenly distributed.
  6. Cover pot and let heat on low for about 6 minutes.
  7. Serve hot!
