Homemade Tacos

I traveled to Austin, Texas in March for a beautiful wedding. In addition to celebrating the love and union of two friends, I made sure to get my fill of Austin grub. That trip brought about a new breakfast inspiration- Savory Breakfast Tacos. After taking a bite of a breakfast taco from Torchy’s Tacos, I knew I wanted to eat this again very very soon. The tacos we ordered came out fast, hot, and savory. “I could make this myself!” was the thought that came to my mind. We ordered The Wrangler (which included potatoes, eggs, beef, and cheese), and another taco that had chorizo- both varieties were delicious and hearty.

The best part about Breakfast Tacos (in addition to their taste!), is how simple and easy they are to make. It does not require fancy ingredients or expensive tools. I set myself on the mission to make Breakfast Tacos and the result was just as spectacular. The below recipe can be tailored to suit your flavor preferences. Flour tortilla can be used instead of corn and turkey can be substituted for beef and lettuce can be added. Complimented with your favorite cheese, this taco will surely hit the spot.

  • Small Corn or Flour Tortillas
  • Butter (for greasing the skillet)
  • Seasoned Scrambled Eggs (cooked to your style)
  • Seasoned Cooked Ground Beef
  • Sharp Cheddar Cheese, shredded
  • Taco Sauce

Instructions

  1. Using the same pan used for cooking the eggs and beef, lightly butter pan.
  2. Over low heat, place tortillas on the pan, frequently turning them until golden on both sides.
  3. Place desired amount of eggs, beef, and taco sauce on each tortilla.
  4. Sprinkle lettuce and cheese.
  5. Serve while hot!
